    Well, I just spent three hours rounding up 6 loose cows, the most stressful thing in the world… it’s going to be a quick note this week….

    We’ll be bringing arugula, basil, glorious beets, broccoli, cabbage, cauliflower, chard, collard greens, cucumbers, fennel, garlic scapes, green garlic, kale, kohlrabi, lettuce (floating heads of red bibb!), escarole, radish, turnips, summer squash and eggs. And maybe more….great week last week on the grassy green! Let’s do it again!

    It is is the time of year when Steph and I become firemen more than farmers. It seems every job here is like putting out a fire. Carrots must be weeded now! Lettuce must be picked now! Chicken fence must be moved now! And did those goats get out again?!!!! Do I sound like I’m complaining? Let’s take a moment to reflect on being buried in 10 feet of snow.

    Ah. Life is good! We’re keeping a close eye on the weather and if we don’t get too much rain, we will have our tasty organic strawberries again at the market on Thursday – along with lots of lettuce!!!!  And for those of you that have been asking – O’Malley is starting to behave or trying to ….we find having a box of his toys put out for him keeps him busy while we work. Now where is his pink stuffed Lamb? Add it to the list.

    Roasted Napa cabbage
    6 tbsp olive oil
    6 cloves of garlic
    6 cups shredded Napa cabbage
    Salt pepper

    Chop the garlic, mix all the ingredients together put on a baking sheet and cook for 15 minutes or until the top pieces of cabbage start to turn a little brown.

    We are serving up some tasty dishes from around the world!

    From Cuba & Florida we have a traditional Cuban Sandwich featuring Brown Boar Farms marinated slow roasted pork, Black Forest Ham, Swiss cheese, dill pickles and yellow mustard served in Jenny’s Breads rolls. From Mexico we have our signature Shrimp Taco. The shrimp is marinated with Patron Tequila and lime juice then grilled. Served with Apple-jicama-cabbage slaw and finished with Elotes (grilled corn with Cotija cheese, mayo, lime and chili powder. Also from Mexico is our Carnitas Taco featuring Brown Boar Farms slow braised pork, choice of cilantro or parsley and lime wedge. From the Middle East region we have a Falafel pita wrap with Tzatziki, Hummus, lettuce from Plato’s Harvest Organic Farms and tomato slices. We are also offering our Falafels in our basket of three topped with Tzatziki. From Puerto Rico, we will be frying up Picadillo (beef) Empanadas and Pork Empanadas, featuring Brown Boar Farm s pork. Last, but not least, we will be frying up some Tostones (green plantains). We pride ourselves on making everything (sans tortillas and breads) from scratch and use all natural and organic-as-possible ingredients.

    The basil is in! That means pesto flatbreads this week made with organic basil and garlic from Plato’s Harvest and Atwell’s Gold cheese from Narragansett Creamery.

    Tip from Jenny:
    Pizza tip: when making pizza with fresh basil, reserve basil until baking is done and sprinkle on once it’s out of the oven. You get a fresher taste and it looks prettier too.

      It’s an exciting week here at the farm and we will have a lot of spring treats … beautiful lettuce, kale, baby arugula and we have high hopes to have organic strawberries again as long as the rain holds out. I can’t believe I said that! The little bit of rain we got was a godsend … we still need more but it doesn’t make the strawberries very happy. However there is always an upside the shiitake mushrooms love the rain!  Looking forward to seeing you all this Thursday at the farmers market and as always thank you for your support!

      More garlicky greens this week for the flatbreads; this week’s will feature spinach and chard from Plato’s Harvest and sauting greens from Skinny Dip as well as garlic from Web of Life Organic Farm. Look of the garlic and rosemary ones as well. And, back by popular demand, golden cheese pizza doughs made with Atwell’s Gold Cheese from Naragansett Creamery. And always your favorites-anadama bread, crusty peasant bread, and-couldn’t come without them- double chocolate buns! And while the strawberries last, buttermilk biscuits for shortbread!

      A recipe from Jenny: Strawberry Shortcake 
      Rinse and slice a quart of fresh strawberries. Make a simple syrup by heating to dissolve 1-2 tablespoons of sugar in a 1/4 water. Remove from heat and drop in an ice cube to chill a bit. Pour over berries and toss. Allow to sit for about a half hour if you can wait that long. In the meantime whip some cream with a little powdered sugar and a few drops of vanilla. Split a biscuit or a double chocolate bun (toasting it first in a cast iron pan with a little butter is a nice touch for this application). Fill with strawberries and top with a generous dollop of whipped cream. Bon appetit!

      Sliders- topped with bacon, onion jam and pickles, served on a house made challah roll
      Chicken wings- grilled, topped with chipotle aioli and zucchini slaw
      Meatballs- with cherry pepper BBQ sauce, topped with zucchini slaw
      Steak tips- grilled and served with a side of potato salad with garlic scapes
      Fresh fish- grilled and served over organic salad greens with pickled cranberries and lemon vinaigrette.

      • Plato’s Harvest Organic Farm

        The farmers market season has begun, and the transplant season is still in full swing, so there’s no time for anything…. but enough griping. We will have full tables of delicious, fresh, organic produce; everything that we brought last week and maybe a few surprises. Fields are really looking good, scapes are coming, summer squash and cucumbers are coming, cauliflower, broccoli, and beets are sizing up and we may have some this week.

        Last week was a great opening market! Seeing the field full of people, hanging out, digging the tunes, eating the delicious prepared food… very nice. Let’s do it again!

        At Last!!! My favorite part of spring! The first crispy sweet pea! A hundred years ago I sold at a small market with a card table that contain peas and a few strawberries. An older farmer there watched me, then hauled himself up, grabbed his cane and came over to my table to say….”listen to me little girl, Sugar Ann Peas…grow them!” I’ve grown them every year since. Thanks AL!!!
        Can’t wait for Steph to come to work on Wednesday…so I can tell her the peas are ready. Its the one thing that will make her groan. So in short….we’ll have peas.! Also beautiful lettuce 4 kinds of vibrant colors, kale, and spinach. ….and peas! did I mention Peas? ;0)

        Tip from Jenny
        Want to do with so many greens?! Sauté them in butter with fresh garlic from the skinny dip farm and spread them across a pizza dough or pie crust with your favorite shredded or crumbled cheese on top. Bake at 400 for 15-20 minutes.

      • Honey I’m Home

        It seems that it is a fabulous year for strawberries! The winter we would all like to forget has made way for a delicious strawberry season, We will be using lots of local strawberries in strawberry rhubarb pies, crumb breads, and muffins!

        We will also be spotlighting lavender. When we first started, we found our niche by creating unique recipes, and many of these included local lavender from the Cape. This week we will have lavender brioche and citrus lavender muffins. See you at the market!
